For your kind of water; where it is shallow, lots of rocks, and portaging involved; Id get a rudderless Tahitian style V-3 outrigger canoe. Should be quite a sight of watching a 100 pound paddler running the trails with a V3 on their shoulder, probably lighter than those open double pro-boats?
Try a huki oc2, with a less delicate layup ie more glass. You go up front her in the back. They have less volume than most and most is up where you would be. You can also get a little rudder from Jude @ Huki for shallower flatter water.
Or turn it into a pure canoe by removing the rudder and letting her sit and steer in the back. Now that you got all the power concentrated up front, and no rudder drag, you'll blow away those double pro-boats. Remembah: No ruddah more bettah! Since you don't use a rudder on your SUP?

Add a 100lbs bag of sand under her seat and your oc2 will sit level in the water.

Thanks everyone. I think I'm gonna go with a Huki V2-X with s-glass/kevlar/carbon and a kick up rudder.
