Try "My Tracks", It will show you speed, distance, elevation(not that useful when always at sea level) and i think it can hook up with heart rate monitors.

I do not know how you would record stroke rate unless you videotaped or paddled to a metronome that could be recorded?

The other day I ran into Peter Newton on the lake testing out a new paddling app being developed by REI. It does all the GPS-type stuff: distance, speed, pace, time, etc. AND tracks your stroke rate with the phone's accelerometer. Probably only works in flat water though. You'd also need a waterproof case.
