The last time I listened to music while paddling, it was an 18 song MP3 player wrapped in plastic and duct tape. I know that things have improved since then... any suggestions on a good set-up for an iphone? Looking for bluetooth or corded headphones and a good case for the phone?

For the phone, get a Lifeproof case.
For the headphones, look at JayBird, or Kanoa
I use the JayBird headphones and they have a pretty solid sound and they've been the most durable waterproof headphones that I've found to date.

the best combo would be a UE BOOM hooked up through bluetooth with a iphone in a lifeproof case inside a pelican case
