hi I am looking at getting into outrigger pedaling and am going to convert my paddle ski by adding an outrigger at the moment I paddle this ski in flat water with a double paddle is there a reason all outriggers seem to be paddled with single paddles I have some single paddles from an old wide canoe we paddled as kids should I use this instead. Is there anything else I should expect to be different going from single hulled canoes/skis to an outrigger I am not looking to start racing or anything at this point just using it for fishing and snorkeling on some reefs about a mile offshore and want a little more stability in the swell

It's traditional that OC is paddled with a single blade, but nothing stopping you using the double, except maybe hitting it on the ama.
Where are you paddling, what country?

Sth Africa ??? ............ that's surf ski heaven. They might exile you if put an ama on a surf ski.
Maybe they will forgive you if you paddle it with that two blade paddle.

If you are going to add the outrigger for stabilty to go fishing and snorkeling then go for it. You might get a few awkward looks but you won't be flipping over and possibly lose your fishing gear with it.
Depending on how you position the outrigger and the space to be able to paddle might determine if you would need to use a single blade or just use that double blade.

mupwe: what you may find is that paddling your ski, called a "Hawaiian canoe when fitted with an outrigger, it will be heavier and slower than originally intended.
The double blade helps to drive a lightweight ski/canoe faster, but a single blade can pull a heavier craft through the water much better in the long run.
Also, when you carry gear for fishing, diving etc. and stop to use these things, then it is handy to have a single blade. It is easier to stick away when not being used.

Would it be a little bit harder to use the double blade for balance when the right blade is in the water?
