On really flat water, I'd give the edge to the Hurricane. As soon as there are any bumps I'd say the Pegasus picks them up a bit easier and will jump over to the next one easier.
Pegasus is quicker turning.
Stability wise the Hurricane is super stable. Ama on the Pegasus comes up very easily, but very smoothly and the canoe balances very well flying the ama.
I'd say that the Hurricane and Pegasus are more similar to each other than to the V1-X.
Plenty people winning all sorts of races on both the Hurricane and the Pegasus.

We have tons of those boats in SoCal so try them out and see which you like the best then look at price and wait times etc.

You might look into seat construction and compare both first.
Pegasus is more comfortable, Hurracane is lighter.

Also rudder - if you paddle in the area where is a lot of seaweed Pegasus straight
stock rudder is pure pain. Hurracane rudder is more swept back.

You will find transition from Huki to Pegasus more unnervig because ama wants to jump
out of the water but this is actually a good thing and probably the best design feature
of this boat.

What about a Huki V1-Z. The boat is fast in flat to medium conditions.
